Healthy Chocolate Mousse

ingredients

  • 4 cups non-dairy greek yogurt
  • 1 cup almond butter, or preferred nut butter
  • 12 oz dark chocolate, melted
  • 2 tsp coconut oil
  • 8 tbsp maple syrup, if using unsweetened yogurt
  • 1 tsp vanilla extract
Topping:
  • 1 can coconut cream, chilled
  • Chopped nuts, I used pistachios
  • Cocoa nibs

instructions

  1. In a heatproof bowl, combine dark chocolate and coconut oil. Microwave at 30 seconds intervals, whisking in between, until completely melted. Allow to cool slightly.
  2. In a separate bowl, whisk yogurt and nut butter until smooth.
  3. Fold the melted chocolate into the yogurt-nut butter mixture using a spatula. Stir in vanilla and maple syrup (if using).
  4. Spoon the chocolate mousse into 2 serving cups.
For the Whipped Coconut Cream:
  1. In the bowl of a stand mixer, fitted with the whisk attachment, whisk chilled coconut cream until smooth. Add a splash of maple syrup if desired. Refrigerate until ready to serve.
Assemble your Chocolate Mousse:
  1. Spoon the chocolate mousse into 2 serving cups.
  2. Top with a dollop of whipped coconut cream.
  3. Sprinkle chopped nuts (I used pistachios), cocoa nibs or your preferred nuts and seeds.
