Healthy Chocolate Mousse
ingredients
- 4 cups non-dairy greek yogurt
- 1 cup almond butter, or preferred nut butter
- 12 oz dark chocolate, melted
- 2 tsp coconut oil
- 8 tbsp maple syrup, if using unsweetened yogurt
- 1 tsp vanilla extract
Topping:
- 1 can coconut cream, chilled
- Chopped nuts, I used pistachios
- Cocoa nibs
instructions
- In a heatproof bowl, combine dark chocolate and coconut oil. Microwave at 30 seconds intervals, whisking in between, until completely melted. Allow to cool slightly.
- In a separate bowl, whisk yogurt and nut butter until smooth.
- Fold the melted chocolate into the yogurt-nut butter mixture using a spatula. Stir in vanilla and maple syrup (if using).
- Spoon the chocolate mousse into 2 serving cups.
For the Whipped Coconut Cream:
- In the bowl of a stand mixer, fitted with the whisk attachment, whisk chilled coconut cream until smooth. Add a splash of maple syrup if desired. Refrigerate until ready to serve.
Assemble your Chocolate Mousse:
- Spoon the chocolate mousse into 2 serving cups.
- Top with a dollop of whipped coconut cream.
- Sprinkle chopped nuts (I used pistachios), cocoa nibs or your preferred nuts and seeds.
